📋 How to make stuffed prunes - step by step
Make a slit in each prune with a knife. Stuff each prune with the Gorgonzola. (photos 1 & 2)
Wrap with a strip of pancetta (photo 3) and secure with a toothpick (photo 4)
Bake the prunes until pancetta is slightly crispy, flipping halfway through (photo 5)
Top with fresh thyme if desired. Serve warm
💭 Make-ahead and storage tips
- This appetizer can be prepared ahead and not baked. Simply stuff the prunes with gorgonzola, wrap with pancetta and place in the fridge in an airtight container for up to 2 days. When ready to serve, pop in the oven!
- Once baked, these stuffed prunes can be stored in the fridge and reheated in the microwave orin a pan on the stove with some oil.

Stuffed Prunes - Wrapped In Pancetta and Filled With Gorgonzola!
Ingredients
- 20 (180g) prunes
- ½ cup (90g) Gorgonzola cheese
- 20 strips pancetta
- Fresh thyme (for garnish) optional
Instructions
- Preheat oven to 350°F Make a slit in each prune with a knife. Stuff each prune with just a little less than 1tsp of Gorgonzola.
- Wrap with a strip of pancetta and secure with a toothpick.
- Place prunes on a parchment-lined baking sheet. Bake for about 15 mins, or until pancetta is slightly crispy, flipping halfway through.
- Top with fresh thyme if desired. Serve warm.
