    These 3-ingredient prunes are the perfect appetizer! They're easy to make, and are bursting full of flavor. You'll keep making them again and again!

    You have to try these pancetta-wrapped prunes stuffed with Gorgonzola! 
    They may be little, but don’t let their size fool you - they pack a TON of flavor into each bite. 
    The salty pancetta pairs perfectly with the sweet prunes, and the Gorgonzola adds a nice little bite.

    🧀 Ingredients list

    • Prunes - sweet and tangy, they add the perfect hint of sugary flavor to this appetizer
    • Gorgonzola cheese - the Italian cheese adds a nutty and milky aroma
    • Pancetta - Pancetta is similar to bacon, yet it is not smoked like bacon is; it is cured instead.

    📋 How to make stuffed prunes - step by step

    Make a slit in each prune with a knife.  Stuff each prune with the Gorgonzola. (photos 1 & 2)

    Wrap with a strip of pancetta (photo 3) and secure with a toothpick (photo 4)

    Bake the prunes until pancetta is slightly crispy, flipping halfway through (photo 5)

    Top with fresh thyme if desired. Serve warm

    💭 Make-ahead and storage tips

    • This appetizer can be prepared ahead and not baked. Simply stuff the prunes with gorgonzola, wrap with pancetta and place in the fridge in an airtight container for up to 2 days. When ready to serve, pop in the oven!
    • Once baked, these stuffed prunes can be stored in the fridge and reheated in the microwave orin a pan on the stove with some oil.

    💡 Top tips

    • The best Gorgonzola to use is a firm one, as it won’t ooze out as easily as soft gorgonzola when baked.
    • The pancetta strips used in this recipe were about 8 inches long, which can wrap around the prunes a few times.
    • The pancetta can be substituted with bacon, and you can make bacon-wrapped prunes instead!

    Stuffed Prunes - Wrapped In Pancetta and Filled With Gorgonzola!

    Ingredients

    • 20 (180g) prunes
    • ½ cup (90g) Gorgonzola cheese
    • 20 strips pancetta
    • Fresh thyme (for garnish) optional

    Instructions

    • Preheat oven to 350°F Make a slit in each prune with a knife.  Stuff each prune with just a little less than 1tsp of Gorgonzola.
    • Wrap with a strip of pancetta and secure with a toothpick.
    • Place prunes on a parchment-lined baking sheet. Bake for about 15 mins, or until pancetta is slightly crispy, flipping halfway through. 
    • Top with fresh thyme if desired. Serve warm.
