I love this time of year. Not because of the hot weather, longer nights where I stay out later, or a possible trip to Italy. Ok, I love summer for all those things. But I love this time of year particularly because it's fig season! We used to have our own fig trees in the backyard when I was growing up, but my mom decided to have them removed recently. So now we rely on friends for our fresh fig fix. And they haven't disappointed this year. We have such an abundance of them that I've gotten a little creative with fig recipes.
I made these fresh figs with goat cheese, arugula, honey and prosciutto recently and they were A-M-A-Z-I-N-G. I had them for a quick snack, but they would be a hit as an appie at a party too. And the best part? They're SO easy to make! I made 6 in about 5 minutes.

Ok, so I made them by cutting the figs in half. I then spooned on a generous amount of goat cheese on each half, then topped the goat cheese with a few leaves of fresh arugula. I then drizzled the goat cheese and arugula with honey. I then wrapped the fig with prosciutto. You don't need much prosciutto; I like to only wrap the center of the fig with prosciutto since I like to leave most of the fig exposed. It creates a much prettier presentation that way!
