    Roasted Grape Crostini With Whipped Ricotta and Honey

    Sometimes in life, we need to look at things not for what they are, but for what they can become! While grapes seem always destined for their usual spot on a fruit platter, looking at them for their versatility beyond the fruit bowl makes these roasted grape crostini the perfect appetizer! The combination of sweet grapes with honey, savory ricotta, and thyme are a great match for this flavorful crostino!

    If you're tired of the typical appetizers, then this crostino is your answer! Roasting the grapes gives such an intense flavor and sweetness to the grapes; it's a great vegetarian appetizer!

    Ingredients:

    • Baguette slices
    • Whipped ricotta
    • Red grapes
    • Honey
    • Fresh thyme

    How to make roasted grape crostini - step by step

    Preheat oven to 400°F. Cut the grapes in half, and place them on a parchment-lined baking sheet. Season grapes with olive oil, salt and pepper.

    Roast the grapes in the oven for approximately 30 minutes, until they begin to wrinkle and start to release their juices.

    Prepare the bread toasts by baking, grilling or frying them. Don't forget to check out this post if you need a refresher on the basics of how to make crostini.

    While grapes are roasting, add the ricotta to a bowl and season with salt. With an electric mixer, whip the ricotta until it is creamy and smooth, a few minutes.

    Spread the ricotta on the bread. Top with 6 grape halves (or 3 whole grapes). Drizzle with honey and top with fresh thyme. Serve immediately!

    • 1 tablespoon olive oil
    • 1 cup ricotta cheese drained

    Recipe Notes

    • Depending on your preference, you can roast the grapes whole, or cut them in half as described
    • Once toppings are added to the crostini, they should be served immediately.
