    Cherry and Pistacchio Chocolate Bark.

    One day back in April (yes, that's how long it took me to write this post), I made this cherry and pistacchio chocolate bark to bring to my friends' Sarah and Marco's party. I planned to bring this bark for dessert because Ben and I were going to be late to Sarah and Marco's since we had to go to Ben's work event first. Well, when I met Ben at his "work event" at an art gallery in North Vancouver, it ended up being him proposing to me (more on that another day)! And Sarah and Marco's party? That ended up being a party they planned for us with our closest friends to celebrate our engagement that night. 
    After many hugs and tears that night among us friends, we ended up enjoying the bark and dubbed it "the engagement bark." Needless to say, every time I make this simple dessert, it brings back memories of one of the most special and perfect nights of my life.

    Ingredients:

    • 2 cups large dark chocolate chips (can be found in bulk section in grocery store)
    • Dried cherries (chopped into small pieces)
    • Chopped pistacchios

    Directions: 

    1. Melt the chocolate using the bain-marie method. 
      Jamie Oliver gives a great explanation of the bain marie method: "Place a heatproof bowl snugly over a saucepan with a little water in the bottom (but not enough so that it touches the bottom of the bowl). There should be no gaps between the bowl and the rim of the pan. Place on the stove, bring the water to a gentle simmer, then lower the heat and start breaking your chocolate into the bowl. Stir with a spatula until completely melted."
    2. Pour the melted chocolate onto a parchment-lined baking sheet and spread thin using a spatula. 
    3. Top the chocolate with toppings- I didn't add quantities for the toppings because you can use as much or as little as you like. 
    4. Transfer to the fridge for a few hours to cool. 
    5. Remove from fridge and break into pieces using your hands (they pieces don't have to be perfect or even in size- that's the beauty of the bark!)
