Ingredients

  • 2 boneless skinless chicken breasts cut into strips
  • cup all purpose flour
  • 1 clove garlic
  • cup white wine
  • 3 tablespoon pesto
  • salt and pepper to taste

Instructions

  • Dredge the chicken strips in flour.
  • Heat olive oil in a large pan over medium heat, then add the whole garlic clove in. If you'd like a stronger garlic flavor, you can mince the garlic instead.
  • Add the chicken strips to the pan and brown on both sides, about 5 minutes total. Season with salt and pepper.
  • Add the white wine to the pan, and scrape up any brown bits from the pan.
  • Reduce the heat to low, cover the pan with a lid, and let the chicken continue cooking for about 5-10 minutes.
  • Remove the lid, and add the pesto to the pan. Give everything a stir so that the chicken is coated in the pesto.
  • Remove from the pan, plate and enjoy!

Notes

  • Boneless skinless chicken breast is recommended for this recipe, but boneless skinless chicken thighs would work as well
  • Go light when seasoning the chicken with salt - pesto is usually salty already
