This sun dried tomato pasta is another simple, but delicious pasta you can make during your lunch break, and have time to spare!. The sun dried tomatoes provide a fun twist for your pasta plate, with a wonderful flavour profile. Light, refreshing, and a perfect lunch idea as we get ready for sunnier days ahead!
For my work from home lunch series, I am truly enjoying the concept of creating beautiful pasta dishes that can be made with ease, and without needing a lot of time. As much as I enjoy a pasta sauce that takes hours to build, the reality is that most people simply don't have that sort of time during the workweek. That's why I'm looking to dispel the myths that an amazing pasta needs hours when you only have minutes.
Enter sun dried tomato spaghetti, or also known as sun dried tomato algio e oglio. With just six ingredients, you'll have a fantastic pasta lunch in under half an hour. The set up is quick, easy, and clean up minimal. The taste is a perfect combination of salt and sweetness in the sun dried tomatoes, and brings the dish together with a touch of garlic.
Once you've made this sun dried tomato pasta, you'll be enjoying your lunch break feeling like you're sitting at a sun-splashed table in your favourite piazza, for a nice pause in the middle of the workday, Italian-style.
Ingredients
- Extra virgin olive oil
- Garlic
- Sun dried tomatoes
- Spaghetti
- Parsley
- Salt
How to make it – step by step
Bring a pot of water to boil. When it's boiling, add salt. Throw the pasta in and cook until it's just before al dente - this is important because the pasta will finish cooking in the sauce.
Once you've thrown the pasta into the water, heat the olive oil in a pan. Add the garlic and chili pepper (photo 1), and when garlic is fragrant, add the sun dried tomatoes (photo 2).
Cook the sun dried tomatoes down slightly, about 3-4 minutes. By this time, the pasta should be ready. If it's not, turn the heat on the sun dried tomatoes down to low.
Add the pasta to the pan, along with some pasta water (about ¼ to ⅓ of one cup) (photo 3)
Let the pasta finish cooking in the pan (photo 4), until the pasta water is absorbed.
Add parsley and stir again. Plate and enjoy your sun dried tomato pasta! (photo 5)
Top Tips
- Don't skip adding the pasta water to the spaghetti in the pan - it will add a creaminess to the dish that you won't get without it
- Add the chili pepper depending on how spicy you'd like your dish, or omit it all together if you don't like spice
- If you don't have fresh chili pepper, you can use dried chili flakes

- chili pepper, to taste sliced into small pieces
- ½ cup sun dried tomatoes drained, and chopped into pieces
- 100 grams spaghetti
- 2 tablespoon parsley minced
- salt to taste
